Quinoa and the Glycemic Index

What is Quinoa?

Quinoa is a small, flavored seed that is high in fiber and protein, and low on the glycemic index.  A quick break down of the GI, it is a scale that measured how a food impacts your blood sugar.  The lower the score the better!  Foods scoring 55 or less are considered low-glycemic.  1 cup of cooked quinoa scores a 53 on the glycemic index.  That is not a bad score at all, especially considering the amount or fiber and protein that you get from it.  You can date this seed’s consumption all of the way back to the Incas and Andes.  The nutty taste and chewy texture are great, but that isn’t why they ate it.  The recognized it as a nutritional powerhouse, calling it the “mother grain”.  Along with the fiber and protein, and Quinoa’s Glycemic Index score of 53, it is also a great source of iron, vitamin B, magnesium and calcium.
